I have a soft spot for chocolate mousse. It is the very first dessert that I ever attempted solo as a very young teen. It was a total success and I was hooked. I couldn’t believe that following a recipe could create such magic..and that the chef was the alchemist.

Sugar-free, gluten-free Macadamia Caramel
When I was trialling recipes for a sugar-free toffee-apple, I stumbled upon this little taste sensation by mistake. I had rolled all of my apples in the toffee mixture and found that I still had some of the mixture left… I hope you enjoy their gorgeous butterscotch-caramel flavour.
Sugar-free Paleo Toffee Apples
One of my most favourite childhood food memories would have to be toffee. I LOVED everything about it, ( the preparation, watching transfixed as the mountain of fine white crystals melted into trickles and waves, resisting but finally giving in to the heat and transforming into a bubbling torrent of sweet, golden, viscous lava).

I’ve always had a bit of a sweet tooth. My favourite childhood sweets were always sticky toffees, clotted cream caramels and fudges and I would sometimes eat them until my teeth hurt!

I think cake is in my DNA. I grew up with a mother who was (and still is ) cake queen and who was taught this craft by my grandmother, who baked love and song into every cake, pirog and pirozhok. (Russian pies and mini-pies). Their baking repertoire was rich and extensive and there always seemed to be a fitting occasion to warrant a performance.

The best food is often simple; hearty, nourishing and honest. At the same time its role in our lives is complex; it nurtures, heals and accompanies us in our life journeys, always there to celebrate the joys of life and console us in our trials.
